One of the things that I often hear is that Beachbody’s clean eating program is hard for vegans and vegetarians, because there isn’t a ton of red container options. It might feel hard or overwhelming to think about jumping into a new eating program, especially if you’re eating a vegan or vegetarian diet and have come to love some of the more convenient options. I want to let you in on something that I don’t talk about a ton on my Facebook page… I eat almost entirely plant-based!
I make a ton of meal plans and give lots of recipe ideas to my meat-loving friends out there. I share lots of ideas with my challengers and team members that include meat. As of the publish date of this blog post (September 2017), I am currently following a vegan nutrition plan and in a coaches test group for a new Beachbody program called 80 Day Obsession. This program is like no other and I am loving it! Well, loving it might be a strong statement, but I’m learning so much about myself as I push forward! If you’ve ever pushed yourself through a hard workout, you know exactly what I’m saying…..
This program includes a live workout with Autumn Calabrese (she’s working out live with the cast and it is streamed for me) as well as timed nutrition. I’m 30+ days in and the results of my hard work and disciplined nutrition are so cool to see! I’m sharing a lot of behind the scenes action on Instagram Stories and Snapchat!
I was getting tired of zoodles (noodles made from zucchini), so I got a little creative in the kitchen. There are so many times when simple is what hits the spot for me, and I love that this recipe doesn’t take forever to make!
Italian Sausage Pasta Bowl Beachbody Vegan Recipe
Pin this Italian Sausage Pasta Bowl Beachbody Recipe so that it’s always in your meal planning tools!
This recipe is for 4 servings and if you are using the Portion Fix containers from Beachbody, each serving is equal to 1 oil, 1 green, 1 yellow and 1 red.
- 4 servings of brown rice pasta
- 1 tomato
- 1 onion
- 1 medium / large size zucchini
- 4 tsp olive oil or Wildtree Garlic Grapeseed Oil (my personal favorite)
- 4 Light Life foods Italian Sausages
- Fresh basil (for garnish)
Chop zucchini, onion and tomato. Over medium heat, saute onion and zucchini until tender in oil. Add in the tomato and cook all three together until the tomatoes are slightly softened (be careful not to over cook them, they’ll turn to mush). Following the directions on your brown rice pasta, cook until done. Chop and heat Italian sausages. Combine everything together and add fresh basil for garnish. This vegan Beachbody recipe makes approximately 4 servings and is an awesome (and quick) meal prep meal.
